Litchee/ Litchi Chinensis, a slow-growing, highly decorative, evergreen tree of the soapberry family often written litchi or lychee, is a tiny tropical fruit of Chinese provenance (Sapindaceous). Typically, it grows to produce edible fruit. Litchi is now frequently found growing in tropical and subtropical regions. More than 20 nations commercially farm it. China, India, Thailand, Vietnam, and South Africa are the principal nations that produce Litchis. Litchi fruits come in a variety of shapes, from oval to rounded, and colours, from green to red. The white translucent pulp and the dark brown seed are both enclosed by the outer pericarp. The flavour of the dried pulp is acidic and extremely sweet, while the flavour of the fresh, juicy, sweet pulp is fragrant and musky and slightly evocative of Muscat grapes. They can also be flavoured, pickled, dried, used in jams, sauces, ice cream, fruit salads, and bottled in syrup.
