Cashew Plant/Anacardium Occidentale is an evergreen shrub or small tree with a spreading crown that originates from Brazil, occurring naturally in Caatinga, Cerrados, and Amazonian Biomes. It belongs to the Anacardiaceae family. The Cashew Apple is a light reddish to yellow fruit, whose pulp and juice can be processed into a sweet, astringent fruit drink or fermented and distilled into liquor. The seeds of most fruits grow within the flesh, but the cashew seed hangs from the bottom of a cashew apple, essentially a swollen stem. Cashews have a rich nutty flavor, similar to almonds or peanuts.
